IPA Mustard Sauce for BBQ
Playing with the idea of South Carolina mustard sauce for pork, but with a little California mixed in, gave me the idea for a by-coastal recipe. This IPA Mustard Sauce for BBQ is perfect served alongside Porter Beer Brined Pork Shoulder, Blind Pig-Injected Smoked Pork Butt, grilled Beer Brined Free Range Chicken, and | or Texas Style Smoked Beef Brisket. As mustard, in this case, beer mustard is used in so many BBQ applications, it makes sense to use this common condiment. Some pitmasters, rub mustard onto their meat before cooking; getting into the nooks and crannies of the protein, and giving a Spice Rub something to stick to, outside of the additional flavor attributes.
With simple ingredients, this IPA Mustard Sauce for BBQ is quick to make and delicious on pork, beef, chicken or vegetables, tofu, or grilled potatoes. A 12-ounce bottle of APA | IPA | DIPA is mixed with some of my Home Brew Chef All Purpose BBQ Rub, a few spoonfuls of sugar (to add balance to the sauce), malt vinegar for tang, some beer mustard, homemade or bought (I do love Sierra Nevada Mustards) for astringency and an additional pop of flavor, with just the right amount of salt. This cooking with beer recipe doesn’t get any simpler, as you really don’t want to cook with an IPA styled brew. The hop characteristics are best preserved when this style of beer isn’t exposed to direct heat. This is a no-cook BBQ sauce, captures the essence of both the hop aroma and flavor of the chosen IPA, bringing citrus, herbal and hoppy essence to the mustard BBQ sauce.

- 12 ounce IPA such as Russian River Blind Pig, Sierra Nevada Torpedo Extra IPA or Bear Republic Racer 5 IPA
- 1 teaspoon Home Brew Chef All Purpose BBQ Rub recipe here
- 2 tablespoon sugar, organic
- 1/4 cup vinegar, malt

8 ounce
beer mustard, such as Sierra Nevada Mustard Pale Ale-Honey 8OZ
- 1/2 - 1 teaspoon salt, kosher to taste
- In a quart size mason jar, add the IPA, rub, sugar, malt vinegar and Sierra Nevada Mustard Pale Ale-Honey 8OZ
. Seal with a lid and shake well, until all the ingredients are fully incorporated. Serve this sauce at room temperature. This sauce should be refrigerated and will last for several weeks.
