2K Island Dressing
Thousand Island dressing and Russian dressing are very similar. They are a combination of mayonnaise and ketchup. My version adds some more flavors from other ingredients and doesn’t solely rely on commercial ketchup to give it all its flavor. Using umami, spice (both from chili sauce and seasonings) and vinegar gives balance to the finished 2K Island Dressing | Sauce.
This ‘special’ sauce can be used with shrimp or crab to make a Louie Salad, a dip from veggies, on a burger instead of other condiments or with the updated Ruben pizza.
Makes: 3 quarts of 2K Island Dressing
Ingredients
- 7 1/2 cup White Miso Malt Vinegar Mayonnaise, click here for recipe
- 3/4 cup vinegar, malt
- 3/4 cup honey, local
- 3/4 cup cornichons, gherkins and/or pickles, minced
- 1/3 cup capers, minced
- 1/3 cup Horseradish preferably freshly grated, but prepared will work
- 1/2 cup tomato paste
- 1/3 cup Sriracha Hot Sauce, or other favorite hot sauce, depending on desired heat level
- 2 tablespoon Garlic Chili Sauce
- 2 tablespoon salt, kosher
- 6 each shallot peeled and minced
- 2 tablespoon hop extract, Centennial
- 1/2 cup herbs, fresh, chopped, such as oregano, marjoram, Italian leaf parsley or basil

- In a large bowl, add the White Miso Malt Vinegar Mayonnaise , malt vinegar, honey, cornichons, capers and juice, horseradish, tomato paste, Sriracha sauce, garlic chili sauce, salt, shallots and hop extract. Using a whisk, mix all the ingredients together, then taste the sauce.
- Transfer the sauce into a 4 quart Cambro seal with a green lid, label with the date and refrigerate. Let the sauce sit for a day to fully incorporate all the flavors. This sauce will last for about a month.
