IPA Sour Cream Sauce
A touch of citrus zest brings out the citrus flavors in the IPA’s hop profile and infuse into this sour cream (or Mexican Crème/Crème Fraîche).
This sauce is a component for Four Ale Nachos and is great on tacos, as a layer in a 7 Layer Dip, a sauce for Pamboza Especial de Pollo or used as a stand alone dip.
This recipe makes 2 cups of sauce.
Ingredients
- 1 pint sour cream, Mexican crème or crème fraiche
- 1 teaspoon citrus zest, orange (navel, Valencia), blood orange, cara cara or tangerine; grated on a microplane
- 1 teaspoon hop extract | oil such as Hop Oil
- 2 tablespoon IPA such as Firestone Walker Union Jack IPAFirestone Walker Union Jack IPA
- 1/2 teaspoon salt, kosher

Instructions
- In a medium sized bowl, add the sour cream (or other style cultured cream) and whisk in the citrus zest, hop extract (or oil), IPA and salt. Let the sauce sit for 20 - 30 minutes to fully infuse all the citrus oils. This sauce can be made up to 4 days in advance.
