Decadent Crab Sandwich for Two
I love a good crab sandwich. Yet when do you see a deli offer this delicacy any more? All of my local delis might offer a krab sandwich, but this is not the same thing. Krab is a much cheaper white fish that is puréed white fish, that is then flavored with crab essence and formed to resemble the texture of the crab. So I came up with this recipe, using the Crab with Orval and Leeks recipe for the filling. This mixture is blended with White Miso Malt Vinegar Mayonnaise, smoky bacon, and fresh pea shoots, all assembled on a wonderful roll. It’s a perfect way to spoil your significant other or yourself!

Love a great crab sandwich? Then make this Decadent Crab Sandwich for Two! Crab, Orval beer, bacon, pea shoots in between a wonderful roll.

- 1/4 cup White Miso Malt Vinegar Mayonnaise, recipe HERE
- 1 recipe Crab with Orval and Leeks, recipe HERE
- 2 each bread, such as focaccia, soft sourdough, ciabatta or Dutch Crunch roll
- 1 cup pea shoots, washed and dried
- 4 each bacon thick cut, smoked and cooked
- 1 cup potato chips, such as BBQ style or Sea Salt & Vinegar (optional)
- mixed peppercorns cracked
- Fold the White Miso Malt Vinegar Mayonnaise into the cooled crab salad mixture and set aside. Warm the bread for a few minutes in a hot oven, then remove it and cut each roll or loaf in half. Take the Crab with Orval and Leeks and spread a little on each half of the bread, then divide the remaining crab salad on just two halves of bread. Season with freshly cracked pepper to taste. Top each sandwich with two pieces of bacon.
- On the other half of the bread, divide the pea shoots and top with the optional potato chips to give the sandwich extra crunch. Bring the two sides back together and cut the crab salad sandwich in two. It can be served as is, or warmed in a hot oven for 4 – 5 minutes. Serve immediately.
- Beer Pairing: With all of the earthy, funky flavors in the dish, along with the seafood sweetness, a bright Saison | Farmhouse Ale, Tripel work as a compare beer pairing while a sour ale or Orval will pair nicely as a contrasting beer pairing. The yeasty elements of these styles will accentuate the miso and the Brettanomyces attributes.
