Quadruple Soaked Cherries
Dried fruit is a perfect vehicle to absorb liquid. By adding a beer style that has some of the fruits flavors, it’s a great way to extend the flavor umbrella and enhance a dish further, than just using dried fruit. In this case example, using dried cherries and infusing them with a Quadruple Style Ale. This style of Belgian ale has many deep fruit flavors, some with a heavier date | fig flavor, while others are more cherry | plum | prune notes. Not much beer is needed, giving the chef a little treat (or excuse) to savor the leftovers, if not used into another dish | recipe.
Ingredients
- 1/2 cup cherries, dried such as Montmorency or Sour Cherry variety prefered
- 4 ounce Quadruple style ale such as one of these brews

Instructions
- In a 8 ounce canning jar, add the cherries and top off with the Quad, pouring down the side, at an angle to control the head from foaming over the edge. Seal with a lid and place into the refrigerator. Let the cherries sit for at least 2 - 3 hours to hydrate and up to a week before using.
