Orange Ale Vinegrette
The style of IPA’s showcases the extensive flavor range of the hop cone. The spectrum includes spicy, herbal, dank, citrusy, peppery, piney, woody, onion/garlicky with a varying level of bitterness. Ingredients
- 12 ounce IPA (India Pale Ale) Style beer, such as Firestone Walker Brewing Co. Union Jack IPA, Bell's Brewery Two Hearted Ale or Founders Brewing Co. Centennial IPA
- 3 ounce olive oil, extra virgin
- 1 tablespoon shallots peeled and minced
- 1 teaspoon orange or tangerine zest, grated fine on a microplane
- 1 teaspoon honey wild flower variety
- 1/2 teaspoon salt, kosher

- In a pint size jar, pour the IPA down one side, having the container tilted to minimize the foam or head of the beer. Add the fruity or grassy flavored olive oil, shallots, citrus zest, honey and salt. Seal the jar with a tight fitting lid and shake to combine.

Salad Suggestions:
- To express more of the peppery/bitter flavors of the hop, try adding greens like arugula, curly endive, radicchio, escarole, mustard and/or Belgian endive.

- Try adding herbs like Italian leaf parsley, basil, chives, sage, chervil, oregano, marjoram and/or lemon verbena to the salad greens to accentuate the herbal qualities found in the beer.

- Fresh pressed extra virgin olive oil will also intensify the grassy and herby undertones of the India Pale Ale.
- The acids in heirloom tomatoes will highlight the flavors found in hops.
- Feta cheese's inherent salinity will also enhance the hop wallop of the brew.
