  • In a pint size jar, pour the IPA down one side, having the container tilted to minimize the foam or head of the beer. Add the fruity or grassy flavored olive oil, shallots, citrus zest, honey and salt. Seal the jar with a tight fitting lid and shake to combine.

Salad Suggestions:

  • To express more of the peppery/bitter flavors of the hop, try adding greens like arugula, curly endive, radicchio, escarole, mustard and/or Belgian endive.
  • Showcase the citrusy component by adding grapefruit, orange, cara cara, blood orange, Meyer lemon or Peruvian lime segments.  To further the deconstruction of beer in this dish, try using carbonated citrus.  Learn How to Carbonate Citrus.
  • Try adding herbs like Italian leaf parsley, basil, chives, sage, chervil, oregano, marjoram and/or  lemon verbena to the salad greens to accentuate the herbal qualities found in the beer.
  • When selecting the honey variety, pick a single crop honey, such as a orange blossom to further flavor the dressing.
  • Fresh pressed extra virgin olive oil will also intensify the grassy and herby undertones of the India Pale Ale.
  • The acids in heirloom tomatoes will highlight the flavors found in hops.
  • Feta cheese's inherent salinity will also enhance the hop wallop of the brew.
