This Tahini Orange Brown Ale Sauce a perfect sauce to go with Middle Eastern Falafel or alongside most Middle Eastern meal.

Instead of buying tahini, a sesame seed butter, I use whole white sesame seeds, mixed with hemp seeds to get extra Omega 3 rich oils, to make fresh tahini, that is mixed with garlic, salt, orange juice, and zest, plus a beer, to add liquid and extra flavor. The beer can be a citrus-forward brew, like Lost Coast Brewery | Tangerine Wheat, an American IPA that is brewed with orange | tangerine flavored hops like Bell’s Brewery Two Hearted Ale or a malt-forward brew like Hemp Ale that is an American Brown Ale brewed with hemp seeds.

Depending on the time of year, you can substitute many varieties of citrus for the oranges used in this recipe. Try using navel or Valencia oranges, blood oranges, tangerines, tangelos, kumquats, mandarin oranges, or another citrus, that mimics the flavors found in the hop variety used in the beer mixed into this recipe.

Try using this Tahini Orange Brown Ale Sauce as a salad dressing, over mixed greens, or using it as a sandwich sauce, making a Falafel Shawarma with tabbouleh, Beer Hummus, and slices of cucumber wrapped in a Homemade Pita Beer Bread or Lavash bread. Try this sauce with Turkish Lamb Köfte with Stout and | or Chicken & Turkey Köfte with IPA for a different twist, instead of, or serving with yogurt-based sauces (Pomegranate Rose Stout Yogurt SauceTangerine IPA Yogurt SauceGreek Yogurt Sauce for Gyro).

  • In the pitcher of a blender, add the sesame seeds, hemp seeds, garlic, salt, olive oil, zest, orange juice, and a malty-style beer. Seal the pitcher’s lid and turn the blender slowly to high speed. Process the mixture for 1–2 minutes, or until the sauce is completely smooth. Taste and adjust seasoning, if needed. If the sauce is too thick, add more beer, about a tablespoon at a time.
  • This sauce can be served right away, or it will keep refrigerated for up to a week. Note that after the sauce has been refrigerated, it will be thicker.
