When a party calls for cocktails, and the theme is Hawaiian, Island food or anything tropical, a Piña Colada comes to mind.  This version makes 5 gallons of better than off the shelf mixer, that has the booze already added.  After making this cocktail in a 5 gallon corny keg and refrigerated, this cocktail is easy to make.  Hook the keg up to a Nitrogen gas blend and pour into the pitcher of a blender that is 1/2 filled with crushed ice.  The cold cocktail will be puréed and made into a slushy consistency very quickly and can serve many more of these cocktails per hour, with less ice than if you used the store bought pre-mixed version.

  • Begin by having a clean and sanitized 5 gallon keg ready and the lid removed. I like to purge the keg with Nitrogen | CO2 Blend, as this gas is heavier than air, helping preventing oxygenation.
  • Pour in the silver and coconut rum, pineapple juice (strained if it has pulp, to prevent clogging any valves or ports), cream of coconut, alkaline water (acting as melted ice and also changing the pH to help the body absorb the water better), coconut water and coconut milk. Seal with its lid and attach the Nitrogen | CO2 Blend to the out port on the keg. Turn the regulator to 40 PSI and begin to shake the keg. After a few shakes, lift the pressure relief value to purge any remaining air in the keg. This will also help keep the chance of this cocktail going bad.
  • Shake the keg for 3 - 4 minutes, letting the keg fill with gas, while mixing the cocktail.
  • Remove the gas line and label the cocktail. Place it into a The libation Trailer, kegerator or other refrigeration and keep below 40°F | 4°C. Before serving, give the keg a shake, just to be sure all the ingredients are mixed.
  • To serve, fill a pitcher from a blender 1/2 - 3/4 full of crushed ice and top the rest of the pitcher with the Pina Colada mix. Cover with its lid and purée until it is a slushy like consistency. It can be served from this pitcher or transferred to another more decorative pitcher, freeing up the blender pitcher to be used again, keeping the party going!
