  1. Combine the two sugars, Barleywine beer and evaporated milk in a 4-quart saucepan over medium-high heat, stirring constantly to dissolve the sugars; bring to a boil. Cook until the mixture reaches soft-ball consistency, 238°F | 114°C.
  2. Remove the pan from heat, stirring in pecans, bourbon, butter, and a healthy pinch of salt. Using a tablespoon, immediately drop tablespoon-size mounds onto wax paper or a Silpat-lined sheet tray.
  3. Let cool completely. Transfer to an airtight container until ready to serve.
