Kriek Custard Filling
This custard is not only a great filling for a donut, but it can also be a standalone dessert. Flavored with a cherry lambic, this Kriek filling can be used for donuts, cakes and other dessert applications.

An easy to make cherry lambic custard filling recipe that is perfect for a filling for donuts, cakes and other desserts, while also great as a pudding.

Ingredients
- 4 tablespoon corn starch
- 2 pinch salt, kosher
- 2/3 cup sugar, organic
- 1 1/2 cup cream, heavy or whipping preferably organic and not ultra pasteurized
- 1/2 cup milk, whole preferably organic and not ultra pasteurized
- 1 cup Kriek, such as Fruit Lambic or other Fruit Beer
- 1 teaspoon vanilla extract preferably Bourbon base

- In a large bowl, mix cornstarch, sea salt and sugar with a whisk and place on top of a pot of boiling water. Slowly stir in cream, milk and beer, mixing till combined; stir occasionally until mixture is thick and smooth, about 12 – 15 minutes total. Remove from the heat and stir in vanilla. Let custard come to room temperature, then cover and refrigerate until ready to use. Can be made 2 – 3 days in advance.
Recipe Notes
Kriek Custard Filling Recipe Variations:
- Replace the Kriek with a Chocolate Stout and add 4 ounces of dark chocolate to the bowl. Use this as an inverted Black & Tan Donut.
- Replace the Lambic with a Watch City Brewing Co. Hop Explosion IPA and substitute the vanilla for 3 drops of hop oil.
