Keto Cheese Blintz Filling Directions:
  • In a bowl, mix together the ricotta cheese, cottage cheese, cream cheese, egg, sweetener of choice, freshly ground flaxseed, cinnamon, salt, and if you want either vanilla extract or the zest of a lemon.
  • This Blintz Filling may be used right away or refrigerated overnight.
  • Note: To create a thicker filling, the Blintz Filling can be added to a fine sieve placed over a bowl, loosely covered with plastic wrap, and refrigerated overnight. This will allow any excess moisture to pool underneath the sieve, resulting in a firmer texture, and a more cheesy filling in the final blintz.
To Make Keto Cheese Blintz:
  • Take a single egg cauliflower crepe and place a generous scoop (about 1 large soup spoons worth or 3 tablespoons) onto the bottom center, leaving about an inch from the edge of the edge.
  • Pinch the bottom edge and fold the crepe over the filling, covering it completely.
  • Take the right edge, folding over the filling and covering the filling by a third. Repeat with the left side, ultimately creating an envelope. The right and left edges should not be touching and the bottom edge should be level.
  • Now, roll the crepe away from you, to make a 'burrito' like pillow. Keep the seem down and set onto a plate or clean workspace | cutting board.
  • Repeat with the remaining crepes and Blintz Filling.
  • Blintz may be frozen before they are cooked. Wrap individually in plastic wrap and place onto a flat & level surface in the freezer.
How to Cook Keto Cheese Blintz Directions:
  • Stovetop: In a skillet or large sauté pan | cast iron pan, place the pan over medium heat and let the pan preheat for a few minutes. Melt a few tablespoons of butter or coconut oil ( or a mix of both to increase the smoke point, preventing burning).
  • Place about 3 - 4 of the stuffed blintzes into the pan, fold side down. This will cook the edge, helping seal the blintz, making them easier to flip and cook on the second size. Cook for about 2 minutes on each side, turning over when they are golden brown. After the second side is browned, remove them from the pan and place them onto a serving plate or into a preheated 250°F | 121°C oven.
  • In The Oven: Preheat your oven to 350°F | 177°C convection bake, if available.
  • Take a baking dish, and coat with room temperature or melted butter, to prevent sticking. Arrange the blintzes next to each other, to fill your baking container. Brush the tops of the blintzes with melted butter | coconut oil.
  • Bake in the oven for 25 - 30 minutes, or until the center of a blintz registers 170°F | 77°C.
  • If you are desiring a more golden brown color on the tops of the blintzes, similar to the stovetop version, turn your oven to broil, set it to high and place the baking container on the top shelf. With the oven door open, watch to prevent burning and remove when you get the desired brownness.
How to Serve Keto Cheese Blintz:
  • To Serve: Add a few blintzes to a plate, add top with sliced strawberries, mixed berries, a scoop of whipping cream | sour cream or a drizzle of Lakanto Maple Flavored Sugar-Free Syrup. Serve Immediately and enjoy!
