Four Ale Nachos
Four Ale Nachos uses four different recipes to create the best Craft Beer Nachos: Lamb Chili infused with Stout Beer, Smoked Porter Black Beans, Beer Cheese Sauce, IPA Sour Cream | Mole infused Sour Cream.

To Assemble:
  1. Have all the other recipes (Lamb Chili with Stout Beer, Smoked Porter Black Beans, Beer Cheese Sauce and IPA Sour Cream) made and ready to go. Preheat the oven to 400°F | 204°C, convection roast if this is an option on your oven.
  2. Line a sheet tray with either a Silpat® or aluminum foil. Create a layer of yellow corn tortilla chips, then sprinkle some Colby cheddar and pepper jack on top. Next create a layer of blue corn tortilla chips, repeating with the cheeses. Repeat till all the cheese and tortilla chips have been used. Place into the oven and bake until the cheese melts, about 15 – 18 minutes.
  3. Once the chips and cheese are warm and melted together, transfer them to a serving platter. Next layer the warm Lamb Chili Infused with Stout Beer over the surface of the nachos, then spoon the Smoked Porter Black Beans, making an even distribution over the top, then some of the IPA Sour Cream Sauce | Mole Infused Sour Cream and then the Beer Cheese Sauce. Garnish with the cilantro and serve. You can also create a Hot Sauce Bar with all your favorite hot sauces Nor Cal Mole | Eat Beer Hot Sauce ready to go, for your guests to spice up these Four Ale Nachos as they want.

Recipe Variations:

  • Instead of making the Lamb Chili with Stout Beer, try using pulled pork that was brined in my Garlic IPA Beer Brine for Pork recipe.
