Cooked artisanal smoked bacon that is coated in dark chocolate, then encrusted in smoked almonds, to a pig candy!

  1. Take a piece of cooked and cooled bacon, dipping seven-eighths of it in tempered dark chocolate, lightly shaking it to remove any excess chocolate, then coating each side with chopped smoked almonds. Place onto a drying rack and let sit until the chocolate hardens.
  2. Store the chocolate dipped bacon in an airtight container in a cool place. As cooked bacon is safe to leave out for a few days, since the moisture content, salt cure and chocolate coating all help preserve it.
