While not made with beer, this Dark Chocolate-Dipped Artisanal Bacon, Encrusted in Applewood-Smoked Almonds is a wonderful candy to pair with beer.  Try pairing this chocolate coated pork candy with a, American Stout, Chocolate Stout, or Russian Imperial Stout.  The pairing beer can be barrel aged for a more intense beer pairing experience, using the different types of barrels (Bourbon, Rum, Wine) to create even more compare and contrast interactions on the palate.  This candy is great when mixed with other Chocolate Beer Truffles.  To learn more about chocolate and Making Chocolate Beer Truffles, check out the blog post.

  • Take a piece of cooked and cooled bacon, dipping seven-eighths of it in tempered dark chocolate, lightly shaking it to remove any excess chocolate, then coating each side with chopped smoked almonds. Place onto a drying rack and let sit until the chocolate hardens.
  • Store the chocolate dipped bacon in an airtight container in a cool place. As cooked bacon is safe to leave out for a few days, since the moisture content, salt cure and chocolate coating all help preserve it.
