This page in my online cookbook is dedicated to pudding, or should I say Beer Pudding recipes. These Cooking with Beer | Beer Cuisine recipes will share my knowledge of different beer styles and how to adept them to dessert recipes and ideas for your table.

Chocolate Pudding is a childhood classic, yet when a rich, roasty, chocolaty stout is added to the mix, the flavor umbrella expands, flavors meld together, complexity is created, adding an adult twist. Plus all the ways one can use my Chocolate Stout Pudding Recipe to create new dessert dishes.  This goes for a Hefeweisen Vanilla Bean Pudding recipe, using the natural flavors of banana and clove, infused with vanilla bean to and dairy to create a new version of banana pudding, without bananas at all.  Or using scotch, to make a real Butterscotch Miso Pudding, that dances that line of savory and sweet, with extra complimentary flavors to enhance the essence of  Butterscotch to a new level.

Pudding also is a classic dessert from England, yet not the silky dairy ladened version most Americans are used to. Puddings are steamed, usually with dried fruit, with more of a cake batter, with lots of eggs, butter and spices, that is often spiked with alcohol like Scotch or Brandy. Think Christmas Pudding or Figgy Pudding. This inspired my recipe for Christmas Pudding With Russian Imperial Stout Soaked Dried Fruit & Hard Sauce.

Custard shares the same ingredients as a pudding. The French have a Vanilla Bean Tripel Infused Pot de Crème style custard, were as in the Hispanic cuisine, Flan is the custard of choice. I love my homebrew take of a wort sample, Cascade Hop Flan with 2 Row Malted Caramel Sauce. The Italians have Panna Cotta, or a milk pudding like jello. I crafted a Holiday Ale Panna Cotta topped with a Cherry Flanders Red Sauce. Custards recipes are often used as a filling for Beer Donuts | Doughnuts, to Beer Pies. Taking the pudding concept to a more baked variation, I have a Coffee Milk Stout Custard Cake recipe were the results create a cake | pudding |custard treat. One can even look at frozen custard or beer ice cream as a frozen version with lots of different flavor interpretations and combinations.
