I’m very excited to share this special event with you. Mike “The Bejkr” Zakowski and I are collaborating together, sharing our seasonally curated Schiacciata (pizzas), cooking in a wood-fired oven with a natural levain whole wheat | spelt crust, using primarily local ingredients, served with over-the-top salad and incredible cookies. Everything will be set To-Go, with wines offered by the glass or bottle, from Winery Sixteen 600.
For those who might not know my friend Mike, he was one of three members of the 2012 USA Baking Team, which won Silver in Paris, France at the famed Coupe du Monde de la Boulangerie (World Cup of Baking). He also was among 24 bakers from 18 countries who will compete at the Maîtres de la Boulangerie (Bakery Masters) in Paris, France, in 2014. He shares his baking knowledge through the weekly Friday Farmer’s Market in Sonoma, CA each week (at Depot Park), teaching and consulting across the US and the world. The Bejkr specializes in whole grain loaves of bread that stand apart, adopting freshly milled, using ancient grains, all organic, and naturally leavened with his unique cultures to ferment his doughs. A seasonal bread, using a naturally fermented hard cider, Aeplz | Cider Bread, shows his mastery of technique, finesse, and style.
For this event, we are featuring seasonal, local, homemade, ōGanik + Bio ingredients from Paul’s Produce, Jackson Family Gardens, Oak Hill Farms, Vella Cheese, Straus Family Creamery, Spectrum Farms, Central Milling, Cannard Famly Farms, and Fatted Calf.
